Try this lovely Thai Fish Cakes with a fresh Thai Cucumber Salad, your family will love it and it an absolute breeze I promise you!
You need to get hold of some white fillet fish. I just got some Sole, this was recommended by my fishmonger and he did a good job of cleaning and filleting for me!
In a food processor place the fish, some leaves of coriander, salt, pepper, a dash of lime juice, egg white and a some thai chilli sauce. Process until smooth or mixed well.
Now using a spoon, spoon the fish mixture into a pan of hot vegetable oil. It should take only about 3 to 4 minutes for it to be done well, so scoop them out.
For the cucumber salad, chop up some tomatoes, mint leaves and coriander. Using a peeler, peel some cucumber onto your dish. Now mix all the salad ingredients. Add some lime juice and thai chilli sauce. Mix well and serve with fish cakes on top.
